Easy to Follow Recipe of Mexican Dish Tacos

Even though one of my favorite kinds of food comes from Mexico it has become a favorite meal all over North America. There is a choice of corn or flour tortillas and you can fill them up with any kind of filling you can imagine. The taco shells are soft and you can even opt to make them yourself. It’s a fast and simple way to make dinner.

You can fill up your tacos with beef or pork which are the traditional fillings used in Mexico however once you get to the states you find the more popular fillings are ground beef and chicken. There is nothing simpler than preparing a taco dinner all you need to do is take some soft flour tortillas and add some seasoned beef or grilled chicken. Toppings include diced tomatoes, lettuce, grated cheese, salsa, and sour cream.

If you prefer the Mexican way then you can grill up a large piece of marinated beef or pork and when done cut them up into bite-size pieces. Add this meat to your flour or corn tortillas and add chopped onions, cilantro, some lime, pineapple, and salsa.

From Ensenada, Mexico came fish tacos which became famous all over the West Coast. You can take any kind of mild, white fish that you like such as tilapia or cod, and grill it or fry it. Top your fish taco with a tangy mayonnaise or sour-cream type of sauce.

For those who prefer it, you can have your taco go vegetarian filling it with grilled or raw onions, cilantro, cabbage, lettuce, radishes, tomato, pineapple, salsa, sour cream, or a combination of any other kind of filling you can imagine. It’s sure to please.

And if you’re a creative whiz in the kitchen then I can tell you that you can fill up tortillas with just about anything.

Some favorite fillings of mine are:

Any kind of canned beans preferably red, drained and sautéed in a pan with tomatoes, thinly sliced chicken fillet pieces, crushed garlic, grated ginger root, and a splash of soy sauce. I also like to sprinkle with grated cheese. I like cheddar cheese.

I call this the Italian Mexican Wonder – mix ground beef with all kinds of spices such as oregano and garlic powder. Depending on how much beef you’re mixing add one or two eggs, some bread crumbs, and a bit of sour cream. Mix really well and roll up the beef into tiny meatballs. Put them in a skillet to fry. When they are about done add a can of crushed tomatoes along with the juice. When it’s all hot and bubbling adjust seasonings. I like to crush in a beef bouillon cube. To thicken add at least 2 tablespoons of tomato paste. All done you have Italian meatballs which afterward meet the Mexican tortillas. Don’t overload or the tortilla can split. Grated cheese on top and roll up. So good.

Making your own tortillas

Instructions

  • Pour 2 cups of flour into a mixing bowl and add 1/2 teaspoon of salt.
  • Add 3 tablespoons of oil and 3/4 cup of water, and mix well. Knead the dough until smooth.
  • Sprinkle flour on a smooth surface. Split the dough into 8 equal sections.
  • Roll each section into a 7-inch-diameter circle.
  • Spray cooking spray in a nonstick skillet and turn the stove on medium heat. Cook each side of the tortilla for 1 minute until lightly golden-brown. Keep warm.

  1. I have a food tradition of eating tacos every Friday of the week. Unless it’s not possible for me to cook on Friday, that’s when I wouldn’t have tacos. I’m not familiar with this particular recipe but I’m definitely going to try it out and see how good it taste.
